Matcha Protein Pudding
Matcha and vanilla whey protein pudding topped with coconut and raspberries

- 2 tsp matcha powder
- 2 scoops vanilla whey protein
- 500 ml water or milk of choice
- 2 tsps gelatine powder
Optional Toppings
- 1 dollop coconut cream, yoghurt or ice cream
- toasted sesame flakes
- raspberries
- dessicated coconut
- dried rose petals
Add the matcha powder to a large bowl. Add in a tablespoon of water, whisk until the matcha is dissolved
Add in the protein powder and remaining water or milk. Whisk until evenly dissolved
In a smaller bowl, add 2 tsps gelatine powder to 2 tbsps cold water. Whisk in, then set aside for a minute until it turns spongey
Place the gelatine bowl over a larger bowl of boiled water, whisk until the gelatine mixture is dissolved and runny.
Pour the gelatine mixture into the matcha mixture. Mix for 2-3 minutes. Divide into serving cups, then refrigerate overnight
Top with cream of choice and garnish with optional toasted and dessicated coconuts, raspberries and dried rose petals
