Slow-Cooker Spicy Pulled Pork Bibimbap

Ingredients

Spicy Pulled Pork

  • 1.5 kg pork leg, loin or shoulder
  • 3 garlic cloves- minced
  • 1 tbsp brown sugar
  • ½ tbsp Korean chili flakes (Gochugaru)
  • ½ tbsp salt
  • 1 tsp ground black pepper

Spicy Bibimbap Dressing

  • ½ tbsp oil
  • 2 garlic cloves- minced
  • 1 tbsp ginger- grated
  • 2 tbsp Gochujang (Korean chili paste) substitute with other Asian chilli paste- e.g. Sriracha or Sambal
  • tbsp soy sauce
  • 1 tbsp ketchup
  • 1 tbsp mirin
  • 1 tbsp honey
  • ½ tbsp rice wine vinegar
  • ½ tsp fish sauce
  • 1 tsp sesame oil

Bibimbap Bowl

  • 1-2 broccolini bunches
  • 100 g seaweed salad dressed with sesame available in frozen aisle of asian grocers
  • 200 g carrots- thinly sliced or julienned
  • 450 g Korean kimchi
  • 1 cucumber- cubed or sliced into discs

To Serve

  • steamed rice or cauliflower rice
  • fried or soft-boiled egg/s (optional)
  • toasted black & white sesame seeds- to garnish

Instructions

Spicy Pulled Pork
  • Combine the garlic, sugar, chili flakes, salt and pepper. Rub over the pork, cover and leave to marinade overnight
  • If your slow-cooker has the option, set to 'Sear' and cook for 2 minutes on each side, until evenly browned.
  • Set the slow-cooker to low heat, cover and slow-cook for 3 hours.
  • Once the pork is cooked and cooled, drain any excess liquid and shred the pork
Spicy Bibimbap Dressing
  • In a small pan, heat the oil over medium-high heat. Fry the garlic and ginger until fragrant.
  • Add the remaining ingredients and simmer until thickened.
  • Pour the sauce over the pulled pork, and stir until combined.
Assemble the Bibimbap Bowl
  • Prepare and chop any of the vegetables required
  • Put a layer of steamed rice or cauliflower rice at the bottom of the serving bowls as a base
  • Assemble the pulled pork, then the kimchi, cucumbers, broccolini, carrots and seaweed around the bowl
  • Top with a fried or soft-boiled egg (optional) and sprinkle with toasted sesame seeds
