Spiced Basmati Rice Pilaf with Chickpeas and Raisins

Ingredients

  • 1 tbsp olive oil
  • 1 brown onion (200g)- sliced
  • 2 tsp cumin seeds
  • 2 tsp curry powder
  • 2 cans chickpeas- drained
  • 500 g cooked basmati rice
  • tbsp extra virgin olive oi
  • 60 g raisins or currants
  • 1 handful flat-leaf parsley- chopped
  • 1 handful fresh coriander- chopped
  • fried eggs (optional)
  • long red chilli- chopped (optional)

Instructions

  • Heat the olive oil in a large non-stick frying pan over high heat.
  • Add the sliced onions and fry for 2-3 minutes or until softened
  • Add the cumin seeds, curry powder and drained chickpeas. Season with salt and quickly toss for 1-2 minutes or until the chickpeas start to crisp.
  • Add in the cooked basmati rice, and toss until evenly combined. Turn off the heat
  • Drizzle over with the extra-virgin olive oil, add the raisins or currants, parsley and coriander. Stir through until evenly combined
  • Transfer onto serving plates, and top with a fried egg and sliced red chilli (optional). Serve warm
