Spiced Basmati Rice Pilaf with Chickpeas and Raisins
Lightly spiced basmati rice fried with chickpeas, herbs and raisins

Ingredients
- 1 tbsp olive oil
- 1 brown onion (200g)- sliced
- 2 tsp cumin seeds
- 2 tsp curry powder
- 2 cans chickpeas- drained
- 500 g cooked basmati rice
- 1½ tbsp extra virgin olive oi
- 60 g raisins or currants
- 1 handful flat-leaf parsley- chopped
- 1 handful fresh coriander- chopped
- fried eggs (optional)
- long red chilli- chopped (optional)
Instructions
- Heat the olive oil in a large non-stick frying pan over high heat.
- Add the sliced onions and fry for 2-3 minutes or until softened
- Add the cumin seeds, curry powder and drained chickpeas. Season with salt and quickly toss for 1-2 minutes or until the chickpeas start to crisp.
- Add in the cooked basmati rice, and toss until evenly combined. Turn off the heat
- Drizzle over with the extra-virgin olive oil, add the raisins or currants, parsley and coriander. Stir through until evenly combined
- Transfer onto serving plates, and top with a fried egg and sliced red chilli (optional). Serve warm
