Smoky Romesco Sauce

Ingredients

  • 1 roasted capsicum
  • 1 garlic clove
  • ½ cup slivered almonds- toasted
  • 50 grams tomato paste
  • 1 handful flat-leaf parsley
  • 2 tbsp sherry vinegar substitute with red wine vinegar
  • 1 tsp smoked paprika
  • ½ tsp cayenne powder
  • 2 tbsp extra virgin olive oil
  • salt and pepper

Instructions

  • Add all the ingredients to a food processor, blitz until smooth
  • Add salt and pepper to taste
