Honey Roasted Carrots with Yoghurt and Dukkah

Try this for a simple and delicious side dish; a handful of humble ingredients really can make a truly satisfying accompaniment to your protein; perfect for a Sunday roast or a delicious grilled steak. Dutch carrots roasted in spices with honey, a dollop of greek yoghurt and a generous scattering of dukkah.

Honey Roasted Carrots with Yoghurt & Dukkah

Ingredients

  • 1 bunch Dutch / baby carrots- scrubbed well
  • 1 tsp crushed cumin seeds
  • 1 tsp crushed coriander seeds
  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 200 g greek yoghurt
  • 2 tbsp dukkah

Instructions

  • Pre-heat the oven to 190°C fan-forced
  • Scrub the carrots well, and trim the tops off, leaving about 2cm of the stalk on each carrot
  • Combine the crushed coriander & cumin seeds with the olive oil, whisk together and toss the carrots in the oil. Season with salt & pepper, and roast for 15-20 minutes or until golden
  • Assemble the carrots on a serving plate, then drizzle with honey
  • Top with a dollop of greek yoghurt and sprinkle with dukkah. Drizzle with more extra-virgin olive oil if desired
