Healthy Berry Trifle

Christmas trifle has to be one of my favourite festive desserts, and it makes so much sense with the hot Australian weather to finish your Christmas feast with something lighter and refreshing. This Healthy Berry Trifle is super simple and low on calories- so you may actually get to the end of Christmas day without having to unbuttoning those pants! It may be macro-friendly but that doesn’t mean it isn’t supremely delicious. Pick sweet, seasonal, juicy fruits, otherwise find frozen fruit picked at the peak of harvest. If berries are dear, some other amazing flavour combinations could be:

  • fresh pineapples, mangos with coconut yoghurt and mango jelly
  • peaches with raspberry yoghurt and raspberry jelly

Aeroplane Jelly Lite is my latest kidult (kid-ult?) obsession. I was the kid who devoured 3 Jello cups a day, so my heart sung when I stumbled upon the adult-version with virtually no calories (7 calories per serving!). Jelly is essentially just gelatine or agar-agar, which in themselves have very little calories. Add some strawberries into the jelly layer for some extra fun, and let the jelly set.

Artfully top the jelly with a few contrasting layers of fruit and yoghurt- I’ve swapped out the traditional cream with high protein yoghurt (I’ve used Strawberry Yopro), but coconut yoghurt would also be divine!

Summer berries in strawberry jelly dolloped with yoghurt and berry compote

Ingredients

Jelly Layer

  • 1 satchet Aeroplane Jelly Lite Strawberry
  • 100 g strawberries

Toppings

  • 100 g blueberries
  • 200 g YoPro- Strawberry flavour or substitute with any yoghurt of choice
  • 100 g raspberries
  • 100 g strawberries

Instructions

  • Prepare the jelly according to packet instructions. Divide the jelly into two glasses, add 50g of strawberries to each glass and stir to ensure the strawberries are in an even layer
  • Refrigerate for at least 4 hours, or until set
  • Add a layer of blueberries
  • Dollop on the yoghurt
  • Mix the red fruits together and add these on top to form another layer
