Coconut Mocha Protein Panna Cotta
Silky smooth panna cotta made from layers of light coconut milk and mocha-flavoured protein powder, topped with whipped coconut yoghurt

Ingredients
- 1.5 tsp gelatine powder
- 120 ml light coconut milk
- 1 shot espresso coffee
- 2 tsp maple syrup- or sweetener of choice
- 1 tsp cacao
- 2 scoops chocolate protein powder I've used Grilo Chocolate Cricket Protein Powder
- coconut yoghurt or ice-cream (optional)
Instructions
Coconut Layer
- Whisk ½ tsp of gelatine powder with ½ tbsp of cold water. Set aside for a minute.
- Place gelatine bowl over a larger bowl of boiled water, whisk until the gelatine mixture is dissolved
- Pour the gelatine mixture into 120ml coconut milk, mix for 2-3 minutes. Divide into 4 serving cups, then refrigerate for 3-4 hours
Mocha Layer
- Prepare 1 shot of espresso coffee, mix with maple syrup and cacao powder. Set aside until the espresso is no longer hot
- Add the espresso mixture to 250ml of water, then add a scoop of chocolate protein powder
- Whisk 1 tsp of gelatine powder with 1 tbsp of cold water. Set aside for a minute.
- Place gelatine bowl over a larger bowl of boiled water, whisk until the gelatine mixture is dissolved
- Pour the gelatine mixture into in the protein mocha, mix for 2-3 minutes. Divide into 4 serving cups, then refrigerate overnight
To Serve
- Decorate with coconut yoghurt or milk, and sprinkle with cacao powder or chocolate shavings
